The real flavors of corn have been underestimated due to the increased use of GMO products. At manos de maiz, we use organic heritage corn to make stone ground fresh masa and create an open faced thick tortilla called “maizope”. This is our take on a traditional Mexican hand held food which we prepare with original toppings.
Our masa is made with a traditional technique which improves the quality and nutritional value of corn. We honor the oldest grain in the world by using the original varieties grown by generations of Mexican farmers.
